Lemon Meringue Pie

From: Lickin the Beaters
Lemon Part:
1/3 c. cornstarch
1 1/4 c sugar
pinach salt
1 1/2 c boiling water
3 tsp egg replacer w/ 4 1/2 tblsp water
1/3 c fresh lemon juice
2 tsp lemon zest
1 tblsp margarine
meringue:
12 tsp egg replacer w/ 6 tblsp water
2 tsp agar agar mixed w/ 4 tblsp boiling water
4-8 tblsp sugar
2 tsp vanilla

1. mix cornstarch, sugar, salt and boiling water. Add egg replacer. cook this until it thicken on med. heat. Add lemon juice, zest, and margarine. Pour into pie crust.
2. boil agar agar until dissolved and clear. whip all ingredients with an electric mixer until it gets very thick and has incorporated some air. spread on top of pie.
3. bake at 350 for 15 min. Refrigerate until firm.

This was SO good!!! I had a hard time getting the meringue to fluff, but it still hit the spot for me!
