I recently discovered
this foodie blog by a vegan triathlete. The recipes look sooo good... and tonight I made the
Greenie Tahini Bowl. It was so, so good. This may become one of my favorite things I've ever eaten. The dressing is AMAZING.
Greenie Tahini Bowl
- Cook 3/4 c. brown rice (3/4c. dry)
- Make the tahini dressing: In a small bowl, whisk together: 2 Tbsp tahini, 1-2 Tbsp water (depending how thick the tahini is), juice of half a lemon, 1 tsp grated or minced ginger root, a small clove minced garlic (oops, I forgot the garlic), 2 Tbsp chopped parsley, and a big squirt of Bragg's aminos (I subbed soy sauce).
- Steam some broccoli and chopped greens of some sort (I used 1 bunch of swiss chard)
- Saute some cubes of tofu for a short while until lightly brown
- Put the rice in a bowl and pour on half the dressing. Put the veggies on top of the rice, pile on the tofu, and add the remaining dressing.
The blog I got this from also says: This meal has over 30 grams of protein (constituting just over 20% of the meal's 550ish calories). Other notable nutrients based on RDA% include approximately 60% of your daily iron and 40% of your daily calcium. (that seems like a freaking huge load of calories.... but... hmm). It makes kind of a lot.. a pretty big bowl.. but I ended up eating the whole thing and still feel a little hungry.
This was so good. I only wish it required the use of less dishes... between a pan for the rice, a pan for the veggies, and a skillet for the tofu, and a bowl for the sauce, and a bowl to eat it from, and a chopping board and knife... yeah, my kitchen is somewhat trashed (3 pans counts as a lot of mess when I'm not embarking on some major cooking project). Worth it though... but maybe a bit too crazy to become one of my "lazy yet delicious" meals.
Also, it was a big reminder that I should eat more swiss chard. That stuff is pretty tasty.
