Asiago has really caught on lately. Wendy's has a chicken sandwich with asiago too. I've seen the ads and it sounds good but I haven't tried it yet. I got turned on to it ages ago; it's fairly strong, but I like a cheese with character.

The sharper the better! My all-time favorite, though, is nokkelost, a Norwegian cheese I grew up eating---but there are no Norwegian delis or specialty stores around here, so I haven't had any in YEARS.
