I know, I know, turkey is traditional, but there's only one of me. If I want turkey, I'll run out an get a package of Hillshire Farms lunch meat, which is already cooked and sliced, and even allowing for to and fro and shopping time, it's still much faster than cooking a whole bird ( Read more... )

Your recitation of what you can do with leftover ham reminds me of Little Ralphie's Christmas turkey menu in "A Christmas Story." :D Pinto beans cooked with a ham bone and served up with cornbread is just awesome. :D

I'm off work until the morning of Nov. 30, when I'll disappear into Advent madness for an entire month. We're having Thanksgiving with our sister-in-law down near Atlanta. She's fixing a ham too, and I've volunteered to make a pumpkin pie and a chocolate cake. Everybody goes wild over anything made with Aldi cake mix. :)

I'm also thinking of black beans and rice with ham. That's the thing about having an 8 pound ham---plenty of options!

Wow, so you've got a week and a half? Cool! Hopefully that'll give you time to Get Stuff Done before the Advent rush. I don't envy you that, I really don't....

I need to finish the Christmas shopping while I'm off and get the house good and clean because nothing will be getting done at home between Nov. 30 and New Year's Eve. I have to work on New Year's Eve to close out the books for the year and it is a giant pain in the butt.

Christmas shopping...I do a wee bit of that. This year, I'm trying to get organized so that I can mail the things that need to be shipped away. (Honestly, half the time, the shipping is more expensive than the gift!)

Yeah for ham. Going by Aldi's after work to purchase a pecan pie. My Mom got one there and said she couldn't bake one as good . (and she makes a pretty good one)
I want to leave it at our house so we have something sweet after the festivities at my sis-in-law's house.

Pecan pies are the first thing you'll see as you walk in! If I'd known they were that good, I might've gotten on, but I'm making due with some of their chocolate-ddipped gingerbread instead.
