http://www.crystalsunflower.com/ is completely vegeterian, and awesome. I've only eaten at the one in Vienna, but it's good enough that I'll go voluntarily, despite being a confirmed carnivore.

Arlington seems to have basically one completely vegetarian restaurant (Saran) but Examiner doesn't really seem to care. If there's enough vegetarian food, I count it. But yes, they have to be in Arlington. Hence the name. But that makes it pretty easy for me.
