Spring Rolls with pickled vegetables, fresh herbs, shrimp, and longanizas

In Los Angeles its spring in full motion, the clouds are peaking from the top of the sky for the weekend with a bit of rain but the weather reached over 100 one day this week and in the last couple of days it has been at least 85 degrees and I’ve been sun bathing and taking in the glory of the season.

These spring rolls are gorgeous. I'm a meat lover, but i have to admit that even the vegetarian one draws me. You did such an incredible job with them and your photography is amazing.

I love spring (though I learned to call them summer) rolls and the combination (barring pickled anything ... avocado is my go to veggie for these) of fillings are very intriguing. I've never heard of longaniza sausages though I have some regular chorizo in my freezer that I can thaw and sear off for my next hot weather meal. Thanks for the tasty idea.

I love spring rolls! I don't make them too often because for some reason it's a ton of work to me. They're so simple though!! Your pictures are amazing too. They actually seem to do the food justice, at least to me since I can't taste them. ;)

I'd move to LA to have you use my kitchen and cook for me, haha! Too bad my house is not going to move there, lol. sigh.
