This may help or not, but weelicious.com is a great source for kid-friendly and healthy recipes. She has a youtube channel where she actually cooks with her children! I've made a lot of recipes for just myself and they've been really delicious, so they are adult-friendly, too. Hope this helps!
Eggs are cheap, and pretty much infinitely customizable. Fried, scrambled, over easy, soft boiled, hard boiled (with a little salt and pepper); hard boiled with mayo for egg salad, with cheese or whatever veggies you have in omelettes or frittatas

Lentil soup is also really easy -- I can't remember the brand, but I made the recipe on the bag of red lentils I got, and it was easy and good. I think it was just onions (sauteed), red split lentils, water, salt, bouillon, and lemon juice added at the end.
Another egg/oatmeal thing to do is strongman oatmeal. Take an egg and run it under hot tap water, let it sit 30 seconds in a bowl of hot water, and replace the water. Meanwhile, cook 1/2 cup rolled oats with 1/2-1 cup water and a pinch of salt in the microwave. Crack the egg into the oatmeal, stir, cover, and let sit two minutes. (The egg should be cooked when this is done -- if not, you can stick the whole thing back in the microwave.) Add a pat of butter and a drizzle of honey.
(I know this sounds weird, but it's actually good -- and it's a good way to make oatmeal heartier and more filling, and have an egg without the bother of an extra pan. And I think the hot water on the egg is just to make sure it's not cold when you put it in the oatmeal.)

It took me a long time to believe it, but you really can just throw things in a pot and get a decent soup.
