what do you do if you have no matzah for the table? as in, you had to order it because you live in bumfuck and it didn't come on time?

My first thought was "pita bread"? ... But apparently the flour it is usually made from is technically chametz, because of the preparation time for processed flour. So I guess it depends on how observant you want to be.

This from the intertubes, because I'm just a wannabe shiksa with a few rabbinical-type friends. :)
