I go 18 months, take 5 lab/lecture courses (Intro to culinary, advanced culinary principles, global cuisine, intro bakeshop, garde manger), 1 lecture course (hospitality management), and graduate with my AS in culinary, then 9 more months, 3 more lab/lecture courses (the bread, cake, and chocolate classes, whatever they call them), for my AS in baking and pastry. seems like you're going through chaos with that school...
dunno if I'm going to yet, but I could take another 18 months, 6 lecture courses, and get my BS in culinary management. but, that 1 lecture class was enough, I think.

Garde Manger is awesome. I dropped about halfway through. Too long of a story to get in to, but you read through my journal so you've seen the cute lil squash ducks and radish roses and my butterfly ice sculpture.
