I don't know that this is really what you're looking for in terms of fairytale AU, but there's the Wizard and Deathless fantasy stories by milady_dragon, three quite long series set in the same universe.

There are a few retellings of "The Princess Bride" and "East of The Sun and West of The Moon" around, and I think that I came across one of "Sleeping Beauty" with Jack, John and Ianto as the fairies (LOL)
