Four different kinds of flour is entirely reasonable, because you use them in different things and for different effects, sometimes in combination for just the right effect. Plus, most flours don't spoil easily, so there's nothing wrong with stocking up. I think it's good to keep at least bread flour and cake flour on hand, and although I don't use whole-wheat flour, I do keep wheat bran and wheat germ on hand to add to bread flour if I want the whole wheat.

Re cheese: cheeses don't last as long as flour does, but then again, their flavors vary more. Rather than buying sour cream, I recommend you buy plain yogurt and then drain it overnight in coffee filters. Yogurt drained this way is as thick and rich as sour cream, but since it's still yogurt, you can still eat it plain or use it like yogurt.

When you say plain yoghurt, what exactly do you mean? Greek style or something else? I don't think I've ever tasted a yoghurt that is the same as sour cream.

I suspect I'm eating a lot more cheese than flour so that should all work out in the end.
