Looks like you found a real treasure trove right there.Look forward to seeing what you do with it all. I don't see why you couldn't do the pillowcase with the knit, but you'll need to pin really well without stretching it and use a zig zag or other stretch stitch and a stretch needle.
You can make a pillowcase out of stretch knit, but you'll need a ball point (also called knit or t-shirt) needle and you'll need to usee a stretch stitch to keep the fabric from stretching like crazy when you sew it.
