flist! does anyone have any good recommendations/suggestions for something in the frittata/crustless quiche family that will feed four people, two of whom are on weight watchers? (i'd make a quiche but i'm not emotionally prepared to make a low-fat, low-calorie crust. you may feel free to laugh at me for being emotionally unprepared to bake ( Read more... )

I really like mini-frittatas made in a cupcake pan. I base mine off of this recipe but they're infinitely adaptable. You can mix real eggs with egg white or egg beaters, the milk isn't necessary, any cheese and veggies or meat, etc. I like to make them with feta and spinach (I use the frozen chopped spinach, microwave it and squeeze out the water) or sharp cheddar and broccoli (frozen chopped broccoli, same as the spinach. Pour the mixture in to fill the cupcake pans most or all of the way--they're quite pretty and poofy when they first come out. They flatted later on, but they're still good. ETA: If you make them in mini-muffin pans they make good finger-food.

Since they're individual servings, it wouldn't be all that difficult to do half of them with a 50/50 mix of whole eggs and whites/beaters and the other half with whole eggs if you wanted. :) I think the rest of your brunch sounds fantastic and like PLENTY of food.

because the photo shows them in ramekins rather than a muffin tin, i now want to make them that way. part of me thinks a full-size frittata would be more festive, but the mini ones are SO CUTE and super convenient for portion control.

i am totally my mother's daughter - she'll have a menu that could feed an army and still be worried there won't be enough. >.< altho it usually results in leftovers....

I'm a big fan of coffee bags. We have a number of coffee-drinking friends, and I only drink decaf and only in the office (and Michael isn't a coffee drinker). So I keep these around and they're wonderful. I get them at Star/Shaws, but almost any grocery store carries them, I think.

I don't drink coffee, but I used to keep those for my mom when she'd come visit me (when I lived out of state) and she said they were pretty decent.

Just make the quiche with no crust! I do this all the time and actually prefer it that way. Just pour the filling directly into your pie plate and cook as usual. *dusts off hands*

How about tea? Just have to boil water and buy tea bags.

I think that's plenty of foood for four.

i think i'm going to end up making frittatas in ramekins - individual breakfasts! - and that's basically a crustless quiche.... i, uh, don't actually have a good quiche pie plate any more because it went MISSING. *crankyface* i buy the ready-made crusts and just make my quiches in those anyway. (i'm lazy as hell and afraid of crust.) considering the crust is always soggy, tho, i probably should be making quiche without it!

i have tea! i always think i'm the only person who drinks it in the morning, tho.

salad is kind of both, altho if you just say "salad" - like, "i think we should have a salad" - that generally means leaves and assorted veg (and sometimes craisins or mandarin orange segments if the bowl is full of spinach and you're me :D ) and either creamy or vinaigrette type dressing. stuff like tuna salad or chicken salad or egg salad has the mayo, but not necessarily anything vegetable-like.
