Creamed Tuna on Toast (Or rice, or mashed potatoes) 1.Make a cream sauce.* 2.Dump in a can of tuna. 3. Stir, salt and pepper to taste. 4. Pour over toast, rice, or mashed potatoes.
* Take a couple tablespoons of oil, and slightly fewer tablespoons of all purpose flour. Mix them together in a saucepan over medium heat for a few minutes, stirring continuously, until it browns somewhat. Don't let it burn, however. Then slowly add milk, continuing to stir, and keep stirring until it thickens. Make sure to scrape the bottom with your wooden spoon, because cream sauces burn easily.
Note: You can put almost anything in a cream sauce. Chicken chunks, sun dried tomatoes, avocado, basil, garlic, or cheeses just to name a few. Get crazy.
What I always do is take some chicken tenders out of the freezer in the morning and put them in a tupperware or ziploc bag, then I pour in some olive oil and some kind of vinegar or alcohol and add some spices, usually garlic and pepper and some other stuff. Let that marinate in the fridge all day, then pan-fry the tenders. I like to take 2 forks and shred the chicken as it cooks, then toss the shredded chicken over some baby spinach or some salad greens.
Also if you take a can of Campbell's condensed Cream soup and mix it into some cooked drained pasta with some cooked ground beef you can have a nice tasty stroganoff.
Have you ever tried taking a whole wheat tortilla, spreading some red pasta sauce on it, covering that with shredded mozarella and some pepperoni or chopped fresh veggies, then cooking the whole thing in a frying pan until the cheese melts? it is delicious
