Personally, I think Alucard cries blood because, like Anderson said, he dried all his tears up.

In volume seven, when Seras saw her memeories, she was crying normal tears, not blood. So... yeah.

Well, yeah, but some people like to theorize that after drinking Pip's blood she changed completely, and her tears would become blood. I dunno, really. :/
