I spent some time looking for a job this morning. Not surprisingly, nothing magically fell into my hands. I shall try again tomorrow. And most likely the day after, too. Wasabi Lime Dressing? *drool*

Oh, it is so, so easy! It's from Nigella Express

3 tablespoons lime juice
1/4 cup peanut oil
1 tablespoon wasabi paste from a tube
1/2 teaspoon kosher salt or 1/4 teaspoon table salt

Put all of the ingredients into a jam jar, and shake to mix, remembering to put the lid on firmly first.

Makes 2/3 cup.

I absolutely love this dressing. Enjoy! :)

It really sounds like the life. :) And I'll have to alter that recipe for the dressing - allergic to peanuts. Maybe sesame oil or something. Mmmm. I made a fantastic lime marinade for chicken last weekend with lime juice, lime zest, white wine, and oil. It was soooo tasty. I love cooking with citrus fruits! :)

I ran out of peanut oil the second time I made it, so I used half peanut, a bunch of olive, and a bit of sesame. The sesame added a lovely flavor.

I have an awesome recipe for citrusy chicken here somewhere. I'll have to dig that up for you.

I just thought I'd bring this up, since you are loving life so much. What if you could continue being more in control of how you spend your days? (Not that being self-employed is all about relaxing on the beach or anything, but you do get to make a lot, lot, lot more of the choices.)
