I don't actually flip the omelet. What I do is let it cook (with one half of the pan loaded down with the inside stuff). Then, once the egg is cooked throughout (note, you may want to use a larger pan if your eggs aren't getting cooked), then slide the heavy half onto a plate and fold the top over the loaded half.
I literally don't use a spatula at all when I make omelets. I think the secret is to use a non-stick pan that's large enough to allow the egg mixture to be thin (so it can be cooked) and to fold the omelet while you're pouring it out onto the plate.
I wouldn't flip it, either, although I do use a spatula for the folding-in-half bit. We don't have spray oil here, but I just wipe the pan with a tiny bit of oil, and that works fine.
We were given a pancake pan as a wedding present, and it's great for making omelettes too. It's just a very flat non-stick pan with a really low rim, and it makes it very easy to get a spatula underneath. They're not expensive (well, there are expensive versions available, but ours wasn't). Highly recommend.
I went to the Smithsonian and they had Julia Childs' kitchen, and a video of her doing many of the things she did, among them, the "20 second omelet"... I learned completely from that, although it takes me more like a minute. I am NOT a cook of any kind, but I now can make a killer omelet. And to flip it, you just pull the handle of the frying pan toward you very fast and then abruptly stop, causing the end nearest you to flip backwards on the other end, kind of like it stopped suddenly in a car accident.
