Shredded Cheddar Cheese and Sour Cream is not optional!!!!!!! They are a necessary!! LOL!

I'm a cheese-addict. There can never be too much for me. Most of the others in my family, however, put it in the Optional category.

Hope you like it! I honestly loved it for a long time - I still would if it weren't just about the only thing I ate for months on end when I was 19-20. It had nothing to do with the food being bad, though - just me needing to find something different. lol

I'm a Ro-Tel whore! I use it in a lot of different dishes-- it's especially good added to omelets. (I'm in NC, btw. The Ro-Tel love is East Coast, too!)

We have Ro-Tel in the Mid-Atlantic, too. I have about four cans of it in my pantry at the moment.

Recipe sounds very similar to King Ranch Chicken.

My grocery store has generic ro-tel now. It's the same stuff inside the can, just half the price... probably made by Ro-Tel, too.
