Adventures in Cauliflower

On the last Sunday of my vacation before returning to work, I dug out the cookbooks. I returned to an old tradition now long since abandoned by a year or more: I went through the cookbooks and wrote out the dinner menus for the next two weeks. Funny that you should mention cauliflower -- I bought a head of it the other day and cooked it last night. I didn't realize normal people ate cauliflower! I thought only odd people ate cauliflower; nobody I knew growing up did, only my family.

I'm curious to hear what you think of it!

Either way, you're right: I *do* like cauliflower! :) (And as for my easy way to prepare it? Heh. Water, salt, pepper, butter or margarine, microwave. Chicken stock if I have it. Parmesan on cauliflower is getting all crrrraaaazy, at my house!)

Semi-Pro tip: I find roasting it brings out the best flavors in cauliflower: like most cruciferous veg, it can be a little skunky.

Biggest Loser is always telling me to make mashed "potatoes" out of cauliflower to make it healthier. Still haven't tried it, but I keep meaning too.

As a side note on cauliflower, it's one of the few vegetables that I can seem to get kids consistently to like, assuming that I can get them to eat it in the first place.
