GIANT ROBOT TRACE SMASHSumptin' happened to me yesterday. A switch got flipped and I've become the Captain of the Giant Robot programmed to destroy all humanity! One of the various times down in GA, but I don't recall precisely when or which visit. Just one that was a lot of years ago - which doesn't narrow it down at all. So a REALLY long time ago visit. ;)

Tomato sauce from scratch is made by:
coring tomatoes (dealer's choice on the kind)
boiling them briefly, then chucking them into ice water (gets the skins off)
squeezing out the seeds and watery innards
putting what is left in a food processor with some diced onion and pureeing until smooth
simmering with herbs and whatever else you want to flavor it with (I recommend olive oil, good red wine, garlic, basil, etc)until delicious

It's very forgiving.

Until you get to the simmering part, this is exactly how I make salsa -- which definitely has a very different consistency from spaghetti sauce. Do you simmer for crazy amounts of time, like all day or something, and it reduces the water and thickens this up?

*laughs* That's how my boyfriend makes salsa as well. Yes, you do simmer for around 2 hours-ish. The heat breaks down the cellular structure of the 'maters, and the oil (and wine, if you're feeling froggy) combines to make more of a sauce and less of a salsa experience. So I guess that means you'd be going to Italy instead of Spain. Taste and season often. Hooray for science in the kitchen!

Now I wish it were summer again! Well, I wish it were summer again and I were a homeowner with a garden full of tomatoes, really. But hope springs eternal -- thanks!
