I haven't even made gravy yet from the scrumptious containers of drippings I brought home (long story short: my in-laws don't make gravy). The drippings themselves are so fantastically tasty, I have just been using them as-is on turkey, drizzled on stuffing, or as an alternate spread on the amazing onion bread my husband made ( Read more... )

(1). No gravy from drippings = crazy talk

(2). We had bucco leftovers and had huge T-giving lunches on both Friday and Saturday!

(3). I was considering making more stuffing and then using it as a base for strada (egg casserole). So go for it!!!

I LOVE T-day leftovers. I never have much, but had enough this year to have 2 whole meals (for myself). No need to get creative w/ the leftovers, simply spoon things onto plate, reheat, eat. Hmmmmmmm.

And the don't make gravy??? To me a turkey is there to 1) Provide gravy, 2) Provide cavity for stuffing. 3) Provide nooks and crannies to place little sausages in for a tasty side. (We don't have sausage stuffing, just breakfast links cooked around the bird for the last hour). I would say make gravy, but if you are enjoying and using the drippings more power to you!!!
