A fish on a line! *g* And Yes... it is intriguing that these Maia should accept, at least some of, the dictates of old age when the took on mortal form - is it to take lust and/or physical attraction out of the equation? Or to give them an outwardly commanding appearance of perceived wisdom traditionally associated with venerable sages?
And I realize your question may have been rhetorical, but my motto when it comes to Istari matters should probably be: have ideas, will ramble! For me, I figured it was mainly the latter, to make them appear wise. And I also never thought any of them were particularly happy about it--thought some handled it better than others--and that it was the Valar's idea. I think Men with a capital m would have been inclined to associate younger-appearing people with naivete or with military/martial endeavors. To me, a lot of the old man guise was an attempt to make sure the Istari were not mistrusted by Men.
And I'd ramble more, but luckily it's time for me to go catch the bus. X)
