COOKIN' WITH TOASTY!

I'MA TEACH Y'ALL BABIES HOW TO MAKE JAMBALAYA!

Okay, y'all gonna need:
  • 1/4 stick of butter
  • 1 lb. (About .45 kg) of Andouille sausage--sliced
  • 1 lb. (About .45 kg) of boiled ham--diced ham
  • 4 tablespoons of flour
  • 1 1/2 cups of chopped onion
  • 2 cups of raw rice
  • 1 lb. (About .45 kg) of cooked chicken--diced
  • 2 (14 1/2 oz., or about 4 deciliters) cans of beef broth and 1 can of broth from your chicken
  • 4 green onions, tops and bottoms--chopped
  • 4 tomatoes--chopped
  • 3 stalks of celery--chopped
  • 1 green pepper--chopped
  • 1 bay leaf
  • 1/2 teaspoon of thyme
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of allspice
  • 1/2 teaspoon of cayenne
  • 1 teaspoon of salt
  • 1 teaspoon of white pepper
  • 2 lbs. (About .90 kg) raw shrimp--peeled

    Use a large, heavy dutch oven and begin by melting butter. Cook andouille and ham. When browned, stir in flour. Add onions, garlic, and rice. Cook, stirring until onions are wilted. Rice will not be done. Add all other ingredients, stirring after each. The pot should be slightly soupy. Rice will absorb most of the moisture. If too dry, add a little water or broth. Jambalaya is done when rice is cooked, approximately 30 to 40 minutes.
