Flourless chocolate cake is the best. Because it's so intense, I like to make a sort of ice cream cake with it: layer of flourless chocolate cake, layer of ice cream, then chocolate ganache. I make the cake really thin, so that all of this still fits in the cake pan: minimal work, but still delicious. It goes in the freezer afterward and lasts a good long time.
