I understand you perfectly. For years I thought I had hypoglycemia, and I would get the withdrawal symptoms you would describe. I would go crazy if I didn't get my carbs every 2-3 hours. Then when I had my nervous breakdown, I also had a bout of IBS with it. I couldn't really eat that much, and my body also screamed 'enough with the wheat!'. When I started eating properly again, I noticed that I didn't get the withdrawal symptoms, but if I ate too much pasta or bread, I wouldn't feel to crash hot. I think now that I had a wheat addiction. I don't know if I'm wheat intolerant or not, and I still eat it, but in very moderate doses.
I'm currently going through a new period of trying to replace sandwiches in my diet. I've been trying to find a wheat free bread alternative, and none are really working for me. I'm more or less settling on rice cakes with the ingredients on the side.
Clearly it's not obvious because I haven't thought of it:) For some reasons I have horrible memories of rye bread from my childhood, but then again I have horrible memories from my childhood of most things I now love.
Spelt is also a delicious alternative to wheat. Though if you're intolerant to the gluten component of wheat, then neither rye nor spelt will be suitable. I love eating Edwards brand bread - it's not cheap ($4.75 or so for a loaf), but it is available at supermarkets (gourmet breads section) and they do rye and spelt and grainy varieties. Yum :)
