The Guardian has a lovely little 7-shot photo essay by Murdo MacLeod of Iain R. Spink making his Arbroath Smokies, a traditional smoked haddock. My husband ate a Smokie when Ian came to the Bridge of Allen Highland games when last we visited Scotland. You would have thought they were giving out ice cream for free the line to buy one was SO long. Ian sold out. I tried some of his and regretted not getting one my self. Not fishy at all and very juicy. A little hard to eat though, and strong smelling. :)

I would love to try them but alas, am allergic to cooked & smoked fish... (think "The Exorcist")
