Crisp Stir-fried Shrimps (or Prawns)

One of my favourite fast dinners is prawns tossed in a wok with a large splash of Thai Sweet Chili Sauce and some chopped spring onions. Mmmm - tasty (it works well for frogs legs too). Yum. That looks so good!

I do have a question, though- what do you do with all the rest of the oil? I've been reluctant to do anything deep-fried, because I have no idea what to do with the excess oil, and throwing it out seems wasteful.

Agreed! I don't throw it out, I put it in a seperate bottle marked with the date and what I used it for, and use it for further deep-frying (or if it's clean enough, shallow frying ( ... )
