There was another thing I learned last night. If you chop shallots and, after using them in your recipe, you put the excess in a plastic container, and if you forget to put that plastic container in the refrigerator, the next time you open it, it will smell like the dirtiest sweatiest armpit in the history of the world.

Me, too! It was AWFUL. It made me not want to use shallots ever again. But I probably will, I'll just never save them - refrigerated or not. God it was horrible and the smell got kind of ... stuck in my nose. Ew.

Trust me, I did more than gag. I seriously wretched in the kitchen for a good 5 minutes. Blech.
