margaritas and red velvet!

Went to a birthday party over the weekend, and made two batches of vegan cupcakes: red velvets (my favorite), and a new kind: mucho margarita!

They both look so wonderful.

I especially love lime, but if I want to make them, is it 100% necessary to use the tequila? I shouldn't be having anything alcoholic, even if it's just baked into something. =o(

Well, you might be able to subsitute more lime juice or something ... or maybe a flavored extract ... (Is there such thing as non-alcoholic tequila?)
