Oh, on a random note, ever tried falafel and Guacomole? I know it sounds strange, but I think it tastes awesome :)

I'm going to make the eggplant tonight. I've been cooking with eggplant a lot recently and never thought to salt it. Great idea. I'll let you know how it turns out.
