thai-style pumpkin soup
i've updated this recipe to incorporate some more changes. when i cooked it tonight, i found that a combination of pumpkin and sweet potato works well, and that lemon juice and rind compliment the curry flavours beautifully :)

that's sounds yummy !!! Do you think you could use unsweetened canned pumkin ? If so, how much would you use ?

yeah, i'm sure you could. i live in australia - i've never even seen canned pumpkin. i would use the biggest sized can you can find, and then add stock until it's the consistency you like. i don't know what canned pumpkin tastes like compared to fresh. the good thing about this kinda soup is you can make loads of it and have it for lunch or dinner the next day, so i'd just use the biggest can you can get hold of. :)

It probably could be - I'd cook the spice mixture as normal, then thoroughly mix it with the pumpkin and cook that for a bit to meld the flavors.

I made pumpkin soup last night (though not this Thai version) I used a whole can. (kind that you can make 2 pies out of) so I wouldn't see a problem using it in this one either.

you can change the name of the memory when entering it and enter the name of the recipe where the subject line usually is.

whoa.. i made something similar last night, but i used lemongrass and a lot of little hot thai chilis, garlic, anf basil... onion too, and coconut milk, pureed pumpkin and chicken broth, blenderised and served with a little rice. unusual but good. glad to hear that great minds think alike!

oh my god i forgot the coconut milk!!!!!!! *headdesk* thanks for reminding me - and yep, i agree with you on the lemongrass. i don't foten add it though because it costs about $1 a stick :(
