I'm not familiar with this recipe, but it sounds interesting. Worth a try, anyway; nobody likes dried up chicken stir fry. Thanks for sharing!

Yeah,the velveting technique is really good, it totally stops the chicken breast from drying out. The ginger/garlic/chilli/kecap manis combo is just something I threw together which ended up working really well. Thanks for the typo alert :)

Sweet! You've got me curious to try.

With the velveting - how does it change the texture of the chicken? Does it leave the chicken feeling stickier or heavier at all?

No, it doesn't make the chicken sticky or heavier. If anything it makes it lighter and silkier - it means the chicken doesn't dry out at all. Let me know how it goes if you try it out :)
