The ginger/garlic/chilli/kecap manis combo is just something I threw together which ended up working really well. Thanks for the typo alert :)
No, it doesn't make the chicken sticky or heavier. If anything it makes it lighter and silkier - it means the chicken doesn't dry out at all. Let me know how it goes if you try it out :)

With the velveting - how does it change the texture of the chicken? Does it leave the chicken feeling stickier or heavier at all?
