Back in the day, I would have played the video, connected my MiniDisc player to audio out and recorded it that way. But this isn't the day, it's the now, so that probably won't work for you.
If you've got the thing in Quicktime, you can strip out the audio with iTunes. Otherwise, a quick search gives suggestions here and here. Looks like DVD Audio Extractor might be the way to go (30-day trial) as the freeware mentioned went away with new Finnish legislation in 2006.
