Theme music will be optional once you've gotten your fifth badge. It's a way of applauding your badassery.

What happens if two characters with theme music battle?

Also, are there/can there be rivalry themes? (like if idk Sora battled Riku or something. Basically someone versus their BFF or nemesis idk it made sense in my head)

Not sure if this has been answered already, but is the Headbutt guy still wandering around Ilex Forest? And if so, can he teach it to everything in someone's party that can learn it?

Yes, the headbutt guy is still there, and you can go learn it from him if your pokemon can.
