In my opinion, it isn't that Anna and Stephen have bad chemistry. It's that Bill is a stick in the mud. I just don't care for the character. And reading the books hasn't made it any better.
It's sometimes hard to describe it, but sometimes I actually like the feeling of watching a show and feeling that the writers don't give a fuck about what I think. Because they write what feels right to them and not what they think I might like. If I like it, good, if I don't, well, too bad. Of course there are the countless examples of horrible bad writing and horrible decisions and writers doing exactly the most wrong and most hated thing, but I think even that would feel more real and honest to me than a writer who does nothing but pandering.
That said, personally I think that most bad writing comes either from pandering or a writer not being able to decide between what he wants and what the fans want. And maybe trying to do both, leading to more suck.
I hate the way he says "I am VAMPYURRR". I know it's more the writer's fault for giving them the lame-o dialogue, but I feel that Stephen tends to cheese it up a little more than is necessary.
