As I was packing for my Crazy European Bicycle Experiment(tm), I was thinking to myself "How Did I Get Here?" I mean, really? In total I will ride at least 2000 miles over 60 days on unknown terrain in the heat of Summer and I know I can do it. I would LOVE if you did a quick-as-possible run down of most of the things that you have learned! I mean, I know a lot about nutrition and stuff since I'm vegan but obviously nothing compared to you. I would like to pick up some of your tips and use them. :)

I'd like to see Forks Over Knives, but many of those food documentaries tend to feature a lot of horrible animal cruelty, and I find it way too upsetting. Is that true of FOK, or is it more about the food science and stuff?

You know, something I have always loved about you is that you manage to talk about your veganism without sounding preachy. Seriously, you don't. At least not to me.

I'm curious about what you added to replace soy. As we've discussed before, I need to avoid soy. I'm not looking to go completely veg but more veg and less meat makes a lot of sense.

Seriously, come to NYC and be my nutritionist.

One of the reasons I took this year off from work was to finally get my blog up & running on theveganscientist.com. It will be a culmination of all the research I've done over the years along with some of my self-experiments.

Congratulations on your dedication and fantastic results! It is nice to see all of this tested by someone with your background. I don't think about so scientifically but I try go with what I know makes me feel good. I'm not a total vegetarian (I dairy, eggs and occasionally seafood) but I try to eat whole grains, pulses and grains and vegetable everyday and avoid most soy and meat replacements. The better I eat the healthier I am. I also get preached at on my "lack of protein"... I feel quite healthy but the most intriguing thing about what you are saying is "insane energy levels" That's what I need!
