I've made something very similar to this once, except 1 lb. beef and no sahsage..it was very, very good. I might go and make this without any meat at all this evening, thank you.

I'm sure you could substitute the mean with mushrooms or nothing at all...just a hearty/chunky tomato sauce. I generally use 1 lb of ground turkey and just get one of those store sauces with an essence of sausage.

Yeah, mushrooms would be a good idea, or maybe heavily marinated tofu..or even by itself without anything else it would still be pretty damn good.
