I got a little note today wondering where I was. Apparently I haven't posted since September. Um... oops? I didn't mean to be so quiet!
I think what helped confuse me was that I have been posting over

Ahem.
Basically it's the same process as making butter, only instead of jumping right in with your heavy cream you culture it using some yogurt and by leaving it out overnight. This has a good writeup with links.

(I grew up in a semirural area and we used to make butter by shaking raw cream in Mason jars. Dadburn kids today have no way to relate to that. ;) )
