The fish makes me think of the Sicilian tradition of covering the fish entirely in salt and cooking it so it is quite moist.
Still this is pretty entertaining and the captions are funny.

the results were very similar to baking fish in salt. But I challenge you to try THAT on a barbecue without a dish to put it in.

Lol, that is awesome! I love the idea of historical cooking but so far the occasionally somewhat strange ingredients (garum on everything wtf) and vague instructions have made me reluctant to try it. This post definitely made me want to give it whirl though.

the advantage of doing this stuff yourself is you can decide how far you want to go in the name of historical accuracy - just enjoy.
FWIW Thai fish sauce is supposed to be a pretty close substitute for garum. And it tastes better in desserts than you might think...

It's really hard to know how much of this is guesswork, of course: but yes, there's no reason to assume that they didn't have a sophisticated tradition of cooking!
