Out of curiosity does anyone have any ideas on the symbolism behind a dream about a white moose?

Guess I've been in Alaska longer than I thought.

In Blackfoot tradition white is symbolic of North, and moose are a stubborn and bullheaded animal, not often claimed as a totem...commonly symbolic of success against all probability, or plain bull-headed luck. The white moose itself was usually interpreted as a determined ancester with a message.

In Native American legend the mosse is thought to represent a balance between strength and gentleness.

Magical attributes...Wisdom, strength, shared joy. Building your self esteeem. Creating a balance between giving orders and doing things. Knowing when to say something and when to keep silent. Guidance and wisdom when approaching any touchy confrontation.

When a moose appears in your dream, there will be a powerful gentle soul entering your life. This may be a father figure that you have been missing and wishing for. The moose will guide you towards bountiful harvests, and feeding pastures. A sign that good fortune will follow in the days to come.

Hope this helps.
These are just the basic things it 'might' represent and a lot of the interpretation will come from what a moose means to you and what it was doing within the dream etc.

Animals

To see animals in your dream, represents your own physical characteristic, primitive desires, and sexual nature, depending on the qualities of the particular animal. Animals symbolizes the untamed and uncivilized aspects of yourself. Thus, to dream that you are fighting with an animal signifies a hidden part of yourself that you are trying to reject and push back into your subconscious. Refer to the specific animal in your dream.

Colors
Colors in dreams represent energy, emotions, and vibes. First consider what that single color in your dream means to you and your own personal associations and relationship with that color.
