Don't forget the pie!

Oh esteemed flist! I face a dilemma! I want to make a sweet potato pie. I've never made one before! I got a recipe online which calls for boiling whole potatoes. Another suggests I boil cut-up potatoes, and my mother says not to boil them at all but to bake them, as boiling increases water content. I'll preface this by saying that I'm not a cook by any stretch of the imagination, but I would do exactly what the recipe says to do. I suspect any extra water will evaporate in the baking. Think of how liquid a pumpkin pie is before it's cooked.

That's what I said to my mom! This particular recipe calls for a 50-60 minute baking time, which seems a bit extreme but I don't really know. Either way, that's a water-zapper if anything!

I also have to decide between that recipe with a cup of white sugar and this one with 3/4 cups brown and heavy cream!

IT seemed weird to me, too, since I've only ever eaten them baked. But I also sort of worry that baking them might dry them out more?

I have never made a pumpking pie either, so I have no idea about pumpkin puree!

Thanks! I will probably bake them. It sounds easier anyway!

I would bake the potatoes. Baking will release some of the water from the potato thus concentrating the sweetness. Bonus from baking is sometimes you'll get a little carmalization going on and that'll make your pie extra good if not with dark brown splotches.

Oh right! It's Thanksgiving for you guys, isn't it? I had my pie 911 LJ post back in October. :P

I've never made a sweet potato pie before, so I'd probably keep to the recipe. My mom would bake them, but she's never made a sweet potato pie either. She just thinks that sweet potatoes are better baked as a general principle.

I like what you decided to do. Two pies... FOR SCIENCE! :)
I'm excited to hear how they turn out.

I'm sorry I don't have any advice but I wanted to wish you luck. And I'll be interested to hear how the pies turn out. That's a good idea to try it both ways.
