high carbohydrate consumption makes people feel significantly hungrier than other types of food consumption (that is, protein and monounsaturated and saturated fats). and if poor people disproportionately eat a diet high in carbohydrates (not unlikely, since the american government subsidizes production of cheap carbs), they are going to feel less sated even when consuming 'enough' calories or what appears to be a good-sized portion of food.
i just finished reading an article (nytimes maybe?) about how children are expected to eat nearly constantly, with snacks at any social outing or school event. this means not being able to provide 4 snacks per day could have a parent reporting 'food insecurity'.
it would put a different light on food insecurity, to know what exactly people considered necessary and enough food and what kinds of food they felt were most important to eat.
