I like boiling some red potatoes, though any type will do, with a little crab boil to give them some flavor. Then you cut/smash them with some butter. Leave them kinds chunky. Is pretty good as a side dish. If you have, sprinkle some grated cheese and bake in the oven for a few minutes before serving.
I also like, and is easy to make, is 15 bean soup. I get a bag of the Hambean brand CAJUN (not regular) beans (usually find it at Winn-Dixie), its usually around the bags of red & white beans. Soak them overnight, drain and follow the directions on the pack or about 8-10 hours in a slow cooker. Less than $2 for a meal and its pretty darn good. If you can, I cut up a pound of smoke sausage sometimes for a little added flavor but is not necessary.
