Re: the aging up of the entire Marauder generation - I'd say they pretty much had to the moment they cast Alan Rickman as Snape. Because the man is over 60, and no way they'd make him able to pass for a man in his early 30s. (I think they're going for something of a mid-40 Snape in the movies.) Considering the backstory demands that he, James, Lily, Remus and Sirius had the same age, that meant all other actors had to look older, which meant Lily had to be older at the time of Harry's death as well.

Now, they could have avoided this by not casting Alan Rickman, but he was on everyone's wish list as Snape, including JKR's, and he is fabulous, so...
