A night off

Ugh. I can't explain how wonderful it's suddenly been to have Tuesday night's plan-free.

Last night was a 'cook all the things' night. Or, well, some of the things. I had dinner to make (homemade cream of tomato soup, which I ate with the leftover pesto pizza I got from ebonlock), but the major part of it was prepping for dinner tonight.

A week or so ago, I had an impulse buy of an America's Test Kitchen slow-cooker recipe book, because I flipped through it and saw 'sausage lasagna' and other casserole-like things. Reading through it, the recipe that most grabbed me that I wanted to try first was a tomatillo-pork and hominy chili, which has you, effectively, making a homemade roasted salsa verde as part of the process.

So I cut up fresh tomatillos (which I've never done before!) and onion and garlic and sprinkled it with various spices (I even have actual Mexican oregano from a long ago Penzey's purchase) and roasted things in the broiler. Then so I'd have less work to do this morning, minced up some Anaheim chiles and mixed it and a bunch of other ingredients into the salsa verde to stick in the fridge. Then I trimmed and cubed up the pork to put it in the fridge as well, so this morning I just had to dump the salsa verde+stuff, pork, chicken broth, and hominy (something I don't think I've ever had) in the crockpot and turn it on.

Then I cleaned up and ran the dishwasher, and still had plenty of time to curl up in my pjs on the couch with the cats.

Hooray for a free night.
