I woke up with an idea for a dish. It's similar to another one I'd had, but I think I like this one better... I just think there's something missing ( Read more... )

Mmmm... kraut on the top. That might just work. Gotta see what my kid thinks of it. I don't think she's had any here... but she might have run into it with her dad. And yeah, a bit of caraway might be just the thing, too.

Most likely, if she's had it at her dad's, she's had the good stuff. Or maybe I'll just cook it and have her try it like that. :-)

I have no suggestions (I don't cook all that often, so I'm of no help), but I do want to say that the only thing that popped into my head was Simon & Garfunkel's "Sound of Silence" because of the spices you're using.

white wine might be good if you used a little garlic; apple juice, raisins, and cinnamon would be good additions - easy on the onions in my opinion. maybe cloves?

Cloves would be good. I think the cinnamon might be overkill... or not. I think if I use garlic, I'll put in some whole cloves so they can roast rather than powdered or diced.

i just wonder about the dry mustard. i don't really use it so i'm not sure if it's a flavor you want with the sweeter seasonings. be sure to use fresh ground black pepper, that would be a nice contrast! how about apple cider instead of apple juice??? then add the sauerkraut!!!

I've used the dry mustard with brown sugar in pork recipes. It works *very* nicely. Cider does sound like a better choice! Good catch.

Or. Um. Beer. Gotta think on that.

I was thinking perhaps a dollop of apricot preserves on top of the chops, but really the recipe sounds pretty darn good.

Not a huge fan of apricot (bad apricot experience while working at a produce market one summer ;-). But a blop of apple sauce... NO! Some homemade *cranberry* sauce! Oh, now *that* might give a nice seasonal variation to this.
