I visited a vanilla farm while i was traveling through the French Polynesia Islands. They were the second largest distributor of vanilla, Madagascar being the first. I remember walking through the tent and it was so humid. They would pick the vanilla from the stock and set them out in the sun on these large burlap rugs and wait for them to age. I was able to smuggle back pieces of vanilla. I felt like a spice mule. When you look at the shrivel brown stem you couldn't believe such a delightful fragrance came from it.
