what is it with bacon. seems like every american dwelling person on my flist is obsessed with bacon.

but bacon and chocolate? yeeeech. :(

1. I'm not every American dwelling person on your friendslist. I'm not trying to represent all Americans.

2. Bacon is good. And enough good quality bacon is entering the market that those of us who used to not eat it can do so now. In the 90s, it was all coming from factory farms. Now there are sources with indie butchers & farms where the point of origin doesn't have to be scary. This means people who don't want to eat slop can now incorporate bacon into our treats.

3. If you've not tried bacon and good chocolate together, don't knock it.

I'm wondering how the dough would survive the freezer. I want to make more, but I don't want this many cookies in my home at once.

Sounds adventurous. I'm actually more skeeved out by the marshmallows than the bacon. Will make a note to try these in April.
Do you recommend a particular type of chocolate to complement the bacon?

They work. The heat makes them get toasty & nutty and the sweetness balances out the saltiness of the bacon.

Semi-sweet or dark chocolate. I used Noir Sirius 65% dark/semi-sweet.
