Rice pilaf with leeks

I invented this to use up the leek I had left after making leek and potato soupTake one clean leek. Slice off the green part, especially if it's starting to dry out. Oh, that looks good! I may put this in my anti-cancer list. (I do have the vegetable stock, local grocery group *believes* in vegetarianism.)

Would be if you made it with soy milk. (I used regular, 'cos I'm not vegan, but the recipe says you can use soy.)
