ahhh italian food!!! I am nearly full blooded italian, and my nana used to make this for me before we'd eat dinner. A good way to make the garlic less overpowering, is to take a clove of it, and rub it on the bread after the bread has been baked (or grilled!)

I -LOVE- Bruschetta!

I made some for my girlfriend last week using roma tomatoes, truffle oil, garlic jack cheese, and a little pasta sauce. We about died :)
